Grilled Buffalo Chicken

img_20160831_192912426I’ve been testing out different chicken marinades for the last few months and here is another one! Alex really loves spicy anything so I thought I’d try out a buffalo chicken. I made something like this in the crockpot a while ago but wanted to make a grilled version for summer nights when even a crockpot is too hot to have going inside. You will want to let this dish marinade for at least 12 hours. The longer the better though. By the time we ended up grilling ours they had been sitting in the marinade for about 24 hours. If you begin with frozen chicken breasts you’ll want to marinade/defrost for about 36 hours. [amd-yrecipe-recipe:236]

Crockpot Chicken & Wild Rice Soup

img_20160919_221012880One of our absolute favorite soups is my Creamy Chicken and Wild Rice Soup. A few weeks ago I had the rice and chicken prepped for this soup but I didn’t actually have time to sit down and make it. So I decided that I needed to figure out how to make this in the crockpot. This saved me time when it came to the cooking since I could just set it and forget it.If you were to cook this longer you could totally cook the chicken and the rice in the the pot with everything else. I already had the rice and chicken cooked so I chose to add them about an hour before serving this. Just long enough to let the flavors simmer together but not long enough to actually cook anything. I wasn’t sure how this would actually turn out so I left out the creamy portions from my original recipe. I’m planning to try this crockpot version again in the future but this time cooking the rice and chicken in the crockpot. I’ll probably also include the creamy portions of this recipe back in too. Grilled Lemon Rosemary Chicken

IMG_20160831_192917203If you’ve been looking for one last recipe to grill this summer look no further. We’ve been grilling a lot all summer long and I wanted to get a new recipe on the menu since I felt that most of the ones we’d been making were getting tired. I wanted to base it on a lemon and pepper chicken since we’d been loving that this summer. I had some white wine left over in our fridge so I paired that with lemon juice, black and white pepper along with some rosemary to really make the flavors pop.Alex said this recipe was amazing! I actually wasn’t home the night he grilled it but he said that he very much enjoyed it and he thinks you will too. You can also easily double or even triple the recipe to feed a large crowd or a party. This recipe would also be wonderful over a bed of spinach with a light dressing for a really fun lunch.[amd-yrecipe-recipe:229]

Grilled Lemon-Pepper Chicken

IMG_20160605_212339382_HDRA couple of months ago I made a lemon pepper chicken dish in the crockpot. It was good, but I figured I could do better with that type of recipe.  I decided that the chicken just wasn’t being done right in this recipe being cooked in the crockpot. I figured that grilling it would give it a wonderful smokey flavor in addition to the lemon and pepper flavors.This turned out incredible! Grilling is definitely the way to go with this recipe. The chicken isn’t soft like in the other recipe and the grill really makes the lemon flavor pop! I used lemon juice from a jar rather than fresh. I simply didn’t have any fresh on hand or I would have used it. I’m actually planning to revisit this recipe yet again with fresh lemon juice. Grilled Italian Chicken

IMG_20160419_220044402This is one of our favorite grill meals to make. Not only is it really easy with just two ingredients, it is super tasty too. It is also a great meal for summer nights since you use the grill instead of the oven! I typically start with frozen chicken breasts, cover them with the dressing then let it marinate for about 24 hours. If you start with unfrozen chicken breasts you can marinate for about 4 hours before they’re ready.You need to make sure to use Zesty Italian Dressing. I’ve tried both types of dressing and the zesty really just kicks the recipe up a notch. If you use regular Italian Dressing the flavor isn’t quite as good. Don’t worry though, the zesty doesn’t make it spicy, it just give the flavor a more complex note.[amd-yrecipe-recipe:199]

Buffalo Chicken Pizza

 IMG_20160401_171035949_HDRAlex has been wanting to try different types of pizza recently. We’ve both grown sick of our typical pepperoni and mozzarella pies so I thought this would be a great way to spice up a pizza without really going too crazy.One thing I discovered while making this, was that it really is better if you coat the chicken with buffalo sauce before you put it on the pizza. It would also be fantastic if you could cook the chicken with the buffalo sauce and really get the flavor to bond with the chicken. I often make buffalo chicken in the crockpot so I decided just to set some aside in the freezer next time we want this dish.You can use any type of crust you’d like on this pizza. We used a semi-thick crust. I think it would actually be the best if you were to use a super thin crust and just lighten up when adding the toppings. This would really give you a chance to experience all the flavors and provide another texture in the finished product.[amd-yrecipe-recipe:196]

Crockpot Chicken Tacos

With this being such an easy recipe, I can set it in the crockpot and forget all about it and we have a fantastic dinner ready at the end of the day!I typically use my own homemade taco seasoning for this recipe. I’ve included specific measurements if you use your own mix. Otherwise you can simply add a packet of pre-made taco seasoning to the recipe instead. I prefer using the homemade mix since you can really customize it to your own specific tastes.This recipe works for just about any form of chicken tacos you could possibly want. We’ve used it for both tacos and nachos. It would also be a fantastically easy was to make filling for chicken enchiladas.[amd-yrecipe-recipe:191]

Chicken Noodle Soup

IMG_20160228_185503244Soup is a staple in our house during the cold winter months. I’ve been stuck in a proverbial soup rut though, making the exact same rotation of soups for the last month or two. I decided to break out of this rut by making a hearty chicken noodle soup.This soup is wonderful. It is chock full of veggies, chicken and spices. Alex even complimented the combination of spices in this dish. This soup is also very easy to make and will take you no time at all if you’ve already cooked the chicken. We’ve been talking about making it work several months, I even had the cashews hidden away in the pantry (we both LOVE cashews and would have eaten them quickly) but I still just never found the time to actually sit down and make this recipe. Well I finally had time and this recipe is better than we even expected!While this is easy to make you’ll need some interesting ingredients that you might not typically have on hand. This is also a gluten free recipe! You just need to make sure that the oyster sauce you have is gluten free. Chicken Fettuccine Alfredo

IMG_8060This recipe has been a favorite of mine for many years. It is one that my Mom would make while I was growing up and that I still continue to make. Funny story, I haven’t ruined many recipes in my time cooking, but this is the one I have the most trouble with. When adding the garlic salt you need to have a light hand, and there has been a couple of times when I’ve accidently added too much! So be careful, doing this will absolutely ruin the recipe.If you eat gluten free you can simply substitute gluten free spaghetti or penne noodles into the recipe. Either will work and the recipe is then gluten free! The chicken is also optional. I personally like to serve it on the side so people can add as much chicken as they like on their individual plates.[amd-yrecipe-recipe:165]

Gluten Free Chicken Pot Pie

IMG_7931Alex has been asking me to figure out how to make Chicken Pot Pie for ages now. I figured it was finally time to make his “dream” become reality. However, I wanted to be able to eat too so I decided to make some minor alterations to make this recipe gluten free.This recipe is WAY easy! As long as you have cooked the chicken before you go to make this recipe you can go from nothing to dinner in less than 45 minutes. I would highly suggest using shredded chicken instead of cubed. Alex’s Crockpot Chicken with Spicy Rice

We were in Tech for The Lion the Witch and the Wardrobe, a Community Theatre show I am directing.  I’ve barely been home in the last few weeks so last week I had to go awol as a blogger since I didn’t have time to post anything! Well, we’ve made it through the first weekend of shows, and I finally have time to do other things.Today’s recipe is actually something Alex found and adapted. Since I haven’t been home much in the last couple weeks he’s been having to make his own dinner most nights. This is one of the recipes he came up with! I asked if I could steal it and post since it was SO easy!While Alex paired this with a spice rice you can definitely serve it over plain white rice if you prefer. Baked Honey Glazed Chicken

100_3805Do some days you just have dinner fails? Has this ever happened to you? Well this happened to me with this recipe. It was absolutely NO fault of the recipe, in fact what we were able to eat was delicious! Unfortunately I just forgot to set a timer and was working on other stuff and completely forgot about dinner in the oven. So sadly it burned, it actually charred quite a bit (as you can see from the photo).This recipe DOES NOT respond well to being left in the oven for over an hour. However, if you bake it for the listed time, you’re going to have a delicious chicken dinner. The glaze for this chicken is slightly spicy but it completely balanced out by the sweet. Crockpot Ranch Chicken

100_3786I love using my crockpot! It is SO handy when I have a busy day or need to have dinner ready by a certain time. I tend to use it pretty often, especially during the fall/spring season when my life seems to be the busiest.This is a quick and easy crockpot recipe. It even cooks in about 3 hours total if you put it on high. It is great for a day when you don’t really have time to make dinner, but forget about making something until the last minute. I found this recipe best over white rice, but you can serve it however you enjoy it. If you did serve it with pasta you would have a little more substance to it.While this recipe isn’t gluten free I am working on a gluten free version of this recipe. Shredded Buffalo Chicken

I’m always keeping an eye out for new recipes to try and when I came across this one I knew Alex would love it. He adores spicy food and I don’t make things “spicy enough” very often because I don’t care much for it. These however, were WAY too spicy for me so Alex LOVED them!This recipe is an easy dinner solution that your family will love. Using your crock pot makes dinner super easy. Once you put the ingredients in the crock pot in the morning you don’t have to worry about it until dinner time again.This recipe is gluten free if you make your own Ranch seasoning mix. I’m working on perfecting the one I have and will post it in the future. However there are many different places you can get recipes to make it. The ranch mix give the chicken a fuller flavor. If you don’t use it you will only have the buffalo sauce and no other flavor. I highly suggest using it in this recipe.


Shredded Buffalo Chicken:3 Large Frozen Chicken Breasts1 Cup Buffalo Sauce1 Cup Water1 Teaspoon Ranch Dressing Mix1/3 Cup Water3 Tablespoons Corn Starch1 Tablespoon Butter

Lightly grease your crock pot and put the frozen chicken in the bottom.Whisk the buffalo sauce, water and ranch dressing mix and pour over the top of the chicken.

Cook on low 6-8 hours, or high for 3-4, until the chicken is cooked through.Shred the chicken in the crock pot.Combine the water and corn starch in a cup. Stir until completely combined. Pour into the shredded chicken mix. Add the butter.

Stir to combine everything in the crock pot and cook for 30 minutes more.Serve with cheese on buns or gluten free bread!

Gluten Free Chicken Cordon Bleu Casserole

I really love chicken cordon bleu. I love the flavor combination of chicken, ham and swiss and this casserole is no exception.  This dish is ooey-gooey and delicious. It is definitely a comfort food. I highly recommend trying this dish if you like chicken cordon bleu.I ran across this recipe on Tasty Kitchen and it looked too good not to try. However, since it wasn’t gluten free I had to figure out how to adapt it so that we could eat it. I downsized the recipe since its just the two of us. If you need to make a larger portion, just double everything and cook it in a 9x13 pan.When you are making the sauce be careful not to brown the butter/gf flour mixture. If you brown the sauce it will have a slightly burned taste to it. I used a glass baking dish, if you don’t happen to have one you can use a metal dish but make sure to monitor the baking time. You may need to reduce it to keep the casserole from burning.


Gluten Free Chicken Cordon Bleu Casserole:2 Boneless Skinless Chicken Breasts (Shredded)½ Lb Shaved Ham (Cut into strips)4oz Swiss Cheese (Sliced)For Sauce:2 Tablespoons Butter1 Tablespoons Gluten Free Flour1 ½ Cups Milk1 Tablespoon Lemon Juice½ Teaspoon Salt½ Teaspoon Paprika¼ Teaspoon White PepperGluten Free Bread Crumbs (for topping)Preheat the oven to 350 and grease an 8x8 glass baking dish.

Place the cooked and shredded chicken on the bottom of the pan, top with the ham ribbons and cover with the swiss cheese.To make the sauce: melt the butter in a medium saucepan. Once the butter is melted whisk in the flour and stir until smooth.

When the mixture is completely smooth and bubbly whisk in the milk and lemon juice. Continue whisking until the sauce thickens.Once the sauce has thickened add the seasonings. Bring the sauce back to a low boil.

Pour the sauce over the casserole. Sprinkle with breadcrumbs.

Bake for 45 minutes until bubbly and golden brown. Let cool for 15 minutes before serving.

Easy Garlic Chicken

This dish was a surprise hit at our house. I’m not sure why, but I didn’t have high hopes when I printed the recipe. I guess it just seemed too easy. The chicken has a wonderful caramelized garlic flavor and is very juicy.This is one of the easiest recipes you can make. From the time I started till dinner was on the table was only about 30 minutes and most of that was baking time. We served the dish with a side of white rice. Alex suggested that a spicy rice would offset the sweet nicely. Next time I make this I’m going to try adding some Cajun seasoning to the rice as I cook it.


Easy Garlic Chicken:4 Chicken Breasts4 Cloves Garlic (minced)4 Tablespoons Brown Sugar1 Tablespoon Olive OilPreheat oven to 450. Coat a glass pan with oil.

In small sauté pan, sauté garlic with the oil until tender.

Remove from heat and stir in brown sugar.

Season chicken with salt and pepper if desired. Place breasts in a prepared baking dish and cover with the garlic and brown sugar mixture.

Bake uncovered for 15-30 minutes, or until juices run clear. Cooking time will depend on the size and thickness of your chicken.

Chicken and Quinoa Soup

I’d been wanting to try quinoa for a long time now and since it is a gluten free grain I thought it would be a fantastic addition to a soup. I’ve based this recipe on a chicken and barley soup (which isn’t gluten free) and it is just as good as the original idea.

You need to make sure to prepare your quinoa before you make the recipe. I’ve used Trader Joe’s Organic Fully Cooked (frozen) Quinoa. It was easy to prepare, I just popped it in the microwave for a few minutes then it was ready to add to the soup.

You also want to cook your chicken in advance. What I like to do is when I’m cooking chicken in the crock pot I add a few extra chicken breasts. I cook them until done then shred it. I set aside what I need for another recipe. If I’m going to use the chicken in the next week I will store it in the refrigerator. If it is going to be longer I will freeze it. This works very well. You just want to unfreeze the chicken before adding it to any recipe.


Chicken and Quinoa Soup:32oz Chicken Broth2 Carrots (chopped)2 Celery Stalks (chopped)1 Green Onion (chopped)½ Cup Onion (diced)3 Minced Garlic Cloves14.5oz can Diced Tomatoes (drained)8oz Prepared Quinoa2 Cups Shredded Chicken1/8 Teaspoon Salt¼ Teaspoon White Pepper¼ Teaspoon Thyme1/8 Teaspoon RosemaryDash of Nutmeg

Prepare your quinoa according to the directions on the package.

Combine the chicken broth, carrot, celery, green onion, onion and tomatoes in a large dutch oven and heat until boiling.

Add the seasoning, chicken and quinoa and bring back to a boil.

Gluten Free Sesame Crockpot Chicken

I was surprised at how good this recipe was. I’ve been trying a couple of new recipes this month and thought this one might not rate with us. However, this dish has excellent Asian flavor! If you aren’t completely happy with the end sauce flavor you can mix in additional sesame seed oil and it will help balance out the flavors.Mom- you’ll pretty much want to print this puppy out and make it for dinner tonight. I think you guys will really enjoy this one! ;)

I only used two chicken breasts when I made this recipe, but I made a full complement of sauce.  I would probably recommend adding a couple additional chicken breasts or cutting the amount of sauce in half. It was pretty saucy.This recipe is gluten free as written. I have used gf low sodium soy sauce, however if you don’t need to eat gluten free you can simply replace the gf soy sauce with any other type.  It will not change the taste at all.


Sesame Crockpot Chicken:2lbs Frozen Chicken Breasts¼ Cup Diced Onion2 Cloves Minced Garlic½ Cup Honey¼ Cup Ketchup½ Cup Gluten Free Soy Sauce (I prefer the low sodium version as well)2 Tablespoons Olive Oil1 ½ Teaspoon Sesame Seed Oil¼ Teaspoon Red Pepper FlakesWhite Pepper to taste1/3 Cup Water4 Teaspoons Corn StarchSesame Seeds, Green Onion and Rice for serving.

Put the chicken in a crockpot and combine all remaining ingredients (except the water and corn starch) in a small bowl. Sir until thoroughly combined then pour over the chicken.

Cook on high for 4 hours, or low for 6-8 hours.

Approximately 15 minutes prior to serving remove the chicken and shred. Mix the water and corn starch in a small bowl and add to the sauce mixture. Add the chicken back into the crock pot and cook until the sauce has thickened, about 10 minutes.

Serve over rice and topped with sesame seeds. You can also serve with chopped green onion if you prefer.
