Shredded BBQ Pork

IMG_20160330_200442789I love using my crockpot often to make dinner. It is a great way to have a hot dinner ready at night even when you may not have time to actually cook anything that day. This is one recipe we tend to make often since it is easy and very tasty. Basically just throw everything into a crockpot and let it cook away all day long. I love serving this with the Pretzel Bun recipe I posted a while back.Any type of BBQ sauce will work for this recipe. Our favorite is either the Famous Dave’s or the Sweet Baby Ray’s brands. You do not want to include all the BBQ sauce when you’re first beginning to cook it. Leaving some until the end will ensure all the pieces are evenly coated with a generous helping of BBQ. Just simply add it after you’ve shredded the meat, stir it around and let it cook for about 30 more minutes. This will ensure everything is evenly coated and warmed through.[amd-yrecipe-recipe:203]

Crockpot Piri Piri Pork

I saw a recipe for Piri Piri Pork on Jamie Oliver’s  website. However the original recipe calls for 2.5 hours of baking time and there is no way I had so much time to cook! (Can I get an “Ain’t nobody got time for that!”) I decided to adapt the recipe to work in the crockpot so it could get all the cooking and I wouldn’t have to do much of anything!

Alex and I have never had piri piri sauce on anything. We weren’t huge fans of the taste. The basis for a piri piri sauce is Middle Eastern, we don’t typically enjoy that type of food. I found the sauce to be a little bit on the spicy side, and Alex found it not spicy enough. So it’s probably a “normal” person’s spicy level. If you are worried about how spicy it might be, simply use a pepper lower in capsaicin and leave out the cayenne seasoning.

The amount of sauce in this recipe is perfect for a larger amount of pork. If you are only going to be making 1lb of pork you should halve the sauce recipe. This will give you a better meat to sauce ratio. I used an Anaheim pepper when making this since it was all my local grocery had. This recipe is gluten free when served over a bed of rice or gf pasta. If you don’t need to eat gluten free you could serve it with bowtie pasta or a crusty bread.

Gluten Free Pork Chops and Rice Casserole

My mother has made this dish for as long as I can remember. It is a fantastic blend of pork chops and flavored rice. However, when I decided to eat gluten free this was one dish that I couldn’t make at first since cream of mushroom soup has wheat in it.

I’ve been keeping an eye out for a gluten free version of the creamy mushroom soup and my local store finally updated its gluten free offerings to include it. I used Progresso brand creamy mushroom soup, but you can use whatever brand works best for your diet. The can I used was 24oz. You need to make sure and add an additional half cup of water to make sure that there is enough liquid in the mixture to actually cook the rice.


Gluten Free Pork Chops and Rice Casserole2 (5oz) Pork Chops1 Can Gluten Free Creamy Mushroom Soup (I used Progresso)1 Cup Instant Brown Rice½ Cup Water2 Tablespoons Onion Soup Mix

Preheat the oven to 350 and lightly oil an 8x8 pan.Place the pork chops in the greased pan.

Mix the rice, soup and water in a bowl.

Pour the rice mixture over the pork chops.

Sprinkle the onion soup mix over the top of the rice mixture.Cover with tin foil and cook for 90 minutes.
