Hazelnut Mocha Blended Coffee

9IMG_20160628_183448Today is National Coffee Day! I thought I’d post another blended coffee recipe in honor of such an exciting day. Also, if you are like me and prefer Almond Milk in your coffee then today is your lucky day! Starbucks now has almond milk permanently at all their stores!Again, this is a very easy recipe. I’ve posted several recipes before like Turtle and Mocha. This one is my current favorite since all I have in the house right now is Hazelnut syrup. It is absolutely delicious though. DIY Turtle Blended Coffee

IMG_20160628_183448Last week I posted my new favorite blended coffee recipe  and I thought I would follow it up with another fantastic recipe for a blended coffee. This time it’s a turtle blend though! So actually even more amazing that the first one I posted.This recipe tastes just like one you’d get at your local coffee shop. It is also super easy to make and you’ll be able to impress all of your coffee drinking friends while saving a few dollars on your daily drink. I’ve used brewed coffee that I cooled in the fridge overnight for this recipe since I’m not much of a coffee drinker. If you like your coffee a bit stronger you can amp it up by making this with either a homemade cold brew or one you pick up at the store. Like with the other recipe I’ve used almond milk in this one. I prefer the taste and the texture to any other type of milk when making blended coffees. If you prefer you can use whipped cream on top drizzled with caramel and chocolate sauces. This will really make it feel like a drink from a coffee shop and you’ve just saved yourself a few dollars![amd-yrecipe-recipe:228]

DIY Mocha Blended Coffee

IMG_20160628_183448I always thought I didn’t like coffee. I didn’t like the taste, it was FAR too bitter for me. I didn’t like how it was so warm. And I didn’t like how it wasn’t hot chocolate on a cold day. However, my lovely younger sister decided to introduce me to the joy that is blended coffee drinks. And since then I haven’t been able to get enough! Often this summer, in the mornings I would blend up one of these puppies and take it with me to Camp, or if I was really dragging in the evening I would blend one and take it to rehearsal. It got me through many a day and it is SOOOO super easy!You will need a blender that can crush ice for this recipe. Alex and I have a small one serving smoothie blender that works perfectly for this. I haven’t tried it in my food processor but I would imagine it could work if you wanted to make a large batch of these.Typically you would make this recipe with cold pressed coffee. However, since I’m new to this whole coffee experience I just make a cup of coffee with my Keurig then put it in the fridge till cold. It’s not as strong as it would be if you used cold pressed coffee but for me it does the trick. If you really want to take a shortcut you should try getting a large bottle of cold press from Trader Joes and then you eliminate the step of cooling the coffee!Personally I like to use Almond milk when making this. It is just like making skim milk but I find that it doesn’t add any taste at all to the drink like regular milk does. It also is great if you have a lactose intolerance. If you don’t like almond milk, or don’t have it you can simply use regular milk or even soy or coconut milk. Just adjust the amount to make sure things keep moving around in the blender.[amd-yrecipe-recipe:223]

Chocolate Espresso Cinnamon Cupcakes

100_3810I went into the office a few weeks ago and I love taking cupcakes when I go in. I have several coworkers who absolutely LOVE coffee and I thought I’d make a coffee based cupcake for them to enjoy. Chocolate is a fantastic compliment to coffee and cinnamon really rounds out the trio.These cupcakes are super fluffy and full of fantastic coffee flavor. The frosting on top was described as “heavenly” by several of my coworkers. It is made with real coffee, espresso powder and cinnamon all in a buttercream base. I chose to sprinkle cinnamon over top to balance out the coffee flavor, however you can use whatever you like, cocoa powder, espresso powder or cinnamon.[amd-yrecipe-recipe:122]

Vanilla Latte Cupcakes

100_2996 - CopyThese cupcakes received rave reviews from everyone who tried them. They are chock full of real coffee and espresso powder. If you love coffee you will adore these cupcakes. The icing is what really makes the cake though; it gives the perfect amount of sweet coffee flavor that makes your mouth sing.100_2992 - CopyYou can use whatever type of coffee you like in these cupcakes. We don’t typically drink coffee here at my house so I just used a k-cup from my Kurig. You will simply want to make sure the coffee is strong. When you mix it with the other ingredients it will dilute the taste.If you’re not familiar with my method of icing cupcakes I’ve put together a short tutorial for you.  You can find it here. I’ve used espresso powder as a garnish on these. You can easily sprinkle it on by taking a fine mesh sieve and using that to sprinkle the powder over the cupcakes. This is an optional step but will really amp up the coffee flavor. Another option for garnish would be a chocolate covered espresso bean. I didn’t have any of those on hand, but it would be another cute way to garnish these cupcakes. 100_2994 - Copy[amd-yrecipe-recipe:62]
