Gluten Free Peppermint – Dark Chocolate Brownie Pie

IMG_7935I randomly decided to make this pie one day when Alex and I didn’t want a whole pan of brownies left over. I was still in the peppermint mood and decided to make this pie minty fresh! It is really amazing…it tastes like a chocolate candy cane and the brownie part is so light and fluffy.This is perfect for a small dinner party or even if you just need a special dessert to have all to yourself. It is pretty quick and very easy to make. The best part is that even though the brownie is pretty thick it is soft and delicious in the middle. The secret is the sour cream you add to the mixture. It make sure the brownie stays soft and pliable no matter how long it sits on the calendar. Dark Chocolate and Pumpkin Brownies

100_3751With all the pumpkin treats I’ve been making lately I decided it was time for some pumpkin brownies. I really wanted to pair the pumpkin layer with a dark chocolate layer to give it a more complex flavor. These brownies are crazy yummy. Once you try one bite you won’t want to stop!While I chose dark chocolate for these brownies you certainly don’t have to. Using semi-sweet would temper the flavor a bit and still be incredible. I would hesitate to use milk or white chocolate since those flavors won’t really stand out against the pumpkin flavor.I had issues getting the pumpkin cream cheese layer to nicely swirl into the brownie layer. I ended up just smoothing the pumpkin layer down so my brownies had two distinct layers instead of swirls. I think next time I may try adding a little water to the brownie batter so they will swirl together a little better and look a little prettier.[amd-yrecipe-recipe:114]Source: Adapted from ABCgo.com
