Italian Manicotti
I had an open jar of ricotta cheese in my fridge from the Pizza Phyllo Bites and I wanted to find a new way to use it up. So I went to the grocery store looking for some sort of noodle to put it in and I realized I’d never actually made manicotti before. Since I really love a cooking challenge I decided it was time to change that.Filling the manicotti was the most challenging part of this recipe. I tried using a spoon but I couldn’t seem to get them packed full enough for my liking. I then turned to a ziplock baggie with the corner cut off. This worked ok, it was very messy. I would probably use a piping bag and tip in the future but I didn’t want to have to clean it all up so I tried to find a disposable way to fill them. If you don’t have a piping bag on hand I would definitely suggest using a ziplock to fill. It works well except for the mess factor.[amd-yrecipe-recipe:168]
