Chocolate Peppermint Cupcakes with Peppermint White Chocolate Frosting

I made these cupcakes to compliment my other Peppermint and White Chocolate Cupcakes. I absolutely LOVE peppermint hot chocolate at this time of year and these cupcakes modeled after my favorite beverage were nothing short of amazing.I don’t often eat non-gluten free treats when I make them for Alex or friends, but these cupcakes were the exception. I decided to have one and they were heavenly! I hope to create a gluten free version next year so I can enjoy more than one without feeling guilty.The frosting is the absolute best part of these cupcakes in my opinion. It is light, fluffy and very pepperminty. I decided that I had no self-control I’d be eating that frosting by the spoonful. It is the perfect complement to a rich peppermint chocolate cupcake.
